Ingredients
3 tablespoons olive oil
4 granny smith apples, peeled and cut in wedges
2 pouches Mushroom Medley Levana Nourishments
3 leeks, sliced
8 serving pieces chicken—16 pieces total: legs, thigh, half breasts, skins on
2 teaspoons turmeric
2 tablespoons cinnamon
Freshly ground pepper to taste
Instructions
Heat the oil in a heavy, wide-bottom pot. Add the apples and sauté until golden. Remove the mixture and set aside. Place the leeks, chicken, turmeric, cider and cinnamon in the pot, and bring to a boil. Reduce the flame to medium and cook covered for 1 hour. Add the reserved apples, ground pepper and cook a few minutes more until just heated through. Transfer the chicken and apples to a platter and check the sauce. If it is too thin, reduce on a high flame 2 to 3 minutes until syrupy. Pour the sauce over the chicken and serve hot, with rice, puréed vegetables, or noodles on the side. Makes 8 servings.
