Mushroom Eggplant Shakshuka Recipe

Eggplant Shakshuka?

Yes, you heard that right! I was on a kick for all things Israeli the whole past week, so it is no wonder that all the dishes I developed recently were Israeli or Israeli-inspired.

The starting point for Shakshuka is always the classic mother Shakshuka Recipe. Although my basic recipe includes many variations on the all-tomato one, this eggplant shakshuka variation came out so fantastic I thought I would give it pride of place in a post all by itself. Every ingredient is a star in its own right: portobello, eggplant, tomatoes, cheddar or other cheese including dairy free. Even no cheese at all would still make a great dish.

Go ahead and get your inspiration from the basic shakshuka above, and get an exciting variation every time. It all depends on what seems inviting at shopping time.

Make Eggplant Shakshuka the utilitarian way

Don’t divide the recipe, even if you are just two people eating. Rather, pour your eggs only over the vegetable section that will get eaten, and save the rest for the next shakshuka meal. It will freeze very well, but if you intend to use it in the next couple days, simple store it in the refrigerator.

Bingo: Get two meals with the labor of one!

The second time around, pour the vegetable mixture in a smaller skillet, and crack your eggs right on top, cooking the mixture just long enough to get the eggs cooked but still nice and runny.

Remember, you always want runny gooey eggs!

Getting the eggs harder will result in an uninspired and uninspiring dish. When it comes to eggplant shakshuka, and any shakshuka for that matter, gooey is the operative word! It always means the eggs go in at the end of cooking.

Don’t obsess about the perfect Saute!

Remember you will covering the skillet with a lid, so the vegetable mixture will soften and come together nicely.

Hot Cereal Recipe. All Variations

Hot cereal is for all of us to enjoy!

My idea of breakfast for Champions! Recently my very pregnant daughter Bella mentioned that her ob-gyn recommended she include more fiber and more vegetable protein in her diet. Always tinkering with the whole gamut of grains, I welcomed the opportunity to experiment, this time setting as my goal, making a hot cereal breakfast that would be at once quick, delicious and nutritious.

I started right in my own kitchen, where I found everything I need, and then some. If my daughter’s enthusiasm and that of everyone who tasted and reported feeling full of positive energy, then I conclude I am onto something great!  Needless to add, this included the children as well. I just love the idea of adding a great number of nutrients, fiber and protein, in minutes and for pennies, without the “help” of those dreaded protein bars loaded with soy and whey protein isolates. You will find as I did that this treat would be suitable as part of lunch or dinner on days where you don’t feel like cooking.

Always the perfect place to start, I opened the doors to my pantry and checked out its contents. Dozens and dozens of glass jars, full of every grain imaginable, and neatly labeled (more about this at the bottom of this post). I was on my way!

My hot cereal combination is just my own personal taste.

You can certainly adjust it to your own preferences. You don’t need to mix so many grains, even one or two is enough. I only mixed them to be sure I get the most benefit from them, not only nutritionally, but for flavor. This amount will last you months, so you will spend those few minutes mixing only once in about six months.

Even though I am not a future mom (I am a perennial mom!), and even though I am not running in any marathon, I immensely enjoy the delicious taste, and the welcome energizing feeling it gives me with: Let me know how yours comes out, and how you feel on a day you eat it: I am getting ready to mix another batch soon!

 

A word on storing grains:

I found out at my own expense, from a long-ago Hitchkock-style invasion of moths which came from an old carton drum box of rolled oats and left me and everyone in my house terrified for days, that moths wholeheartedly share our love for grains, sugar, nuts, raisins and so on, as they easily eat away at the porous paper, plastic or cardboard containers.  Hence my obsessive-compulsive habit of storing everything in glass jars! I hope I pass it on to you: good-bye moths, good-bye rancidity!

Tehina Chocolate Spread

In this amazing Tehina Chocolate Spread, sesame paste, or Tehina, costars beautifully with chocolate. Sort of a new age Nutella, only much less sweet and much healthier!

There’s nothing you would do with Nutella that you couldn’t do with my Tehina Chocolate Spread!

Tehina often plays second fiddle to other, more muscular ingredients,  hummus being the most ubiquitous, followed by sauces and dips. Actually it is the main ingredient in Chalva, but most commercial Chalva errs hopelessly on the sweet side (not so my Quick Chalva, loosely inspired from its cloying  counterpart, and nutritionally correct), so it hardly counts except as a guilty splurge.

Here I am using poetic license with Tehina,  sesame seed paste, and using it here just as I would use a nut butter.

Tehina co-stars on equal terms with the mighty chocolate, and stands up to it fearlessly, elevating the humble paste beyond its wildest dreams in terms of flavor and texture.  Nutella was the dessert comfort food of my expat student years ages ago, so of course I think of it very fondly, but I never buy it as it is loaded with sugar. So I make my own spread, and please forgive this bit of swagger: My Tehina Chocolate Spread blows Nutella and other chocolate nut butter spreads out of the water. Super Delicious, Super Nutritious and Super Natural, it gets whipped up in a couple minutes.  So healthy you could even use it for breakfast! One more thing: It is Super versatile, and you can take it places, as you will see below: Scroll down for all variations.

The amount of sweetener I use in my Tehina Chocolate Spread is very reasonable:

Way below the amount used in commercial spreads, naturally and deliciously augmenting the ratio of Tehina and chocolate per serving. Attention sugar-restricted friends: You’ll love to hear that you can even make it without sugar or other sweetener altogether, using Stevia or Truvia instead of the agave used here, or even a dozen plump pitted medjool dates.
Please do not use honey in this tehina chocolate spread recipe, as it adds a very good but unwelcome layer of flavor in the spread; stick with the perfectly neutral-tasting agave syrup. Likewise, do not substitute anything for the coconut milk, and use the full-fat kind, it is responsible for the amazing creaminess of the spread.
This is a nice large recipe,  and will yield you about 2 pints. It won’t last you too long: it’s that good! Here’s a perfect way to satisfy your craving, the superfoods, gluten-free, dairy-free, low-carb, natural and delicious way. What more could you possibly ask for? You’re welcome!

Variations

Chocolate Hazelnut Butter: Substitute 3 cups toasted hazelnuts for the Tehina, but process them thoroughly in a food processor before adding the remaining ingredients. You might want to use other toasted nuts as well: Peanuts, cashews, almonds, pistachios, pecans, even roasted chestnuts (even though it’s not a nut).  Proceed just as instructed here.

Cake Topping: Add 2-3 tablespoons rum or brandy to the mixture, and use it as top layer to ice cream cake (the rum will prevent it from freezing solid). Likewise, use it as topping or filling to any cake, like a ganache. Spread while it is is still liquid, before it firms up, so it will spread easily.

Tart Filling, Truffles: Add some chopped toasted nuts, or toasted sesame seeds, or grated unsweetened coconut, and a little coconut milk to thin the mixture, and use as a filling for a tart (bake the crust all by itself, then fill it and chill).  Or shape the mixture into little balls, and roll in cocoa powder or grated coconut.

Bars: You could also combine the mixture with 3 cups Granola or Rice Crispies, pat the whole mixture firmly into a pan, chill, then cut into squares or bars.

Dip: Slather on apple, pear or banana slices, or on berries.

Muffins. All Variations Including Cake

Muffins! You say cupcakes, I say muffins!

Gosh, I would hate to lose my popularity with the junior cupcake crowd, but many years of catering kids’ parties and watching their delighted faces as their lick their fingers put my fears at rest. This Muffin recipe is going to be your best friend. Your children will love me!

As if that was not enough, my granddaughter Musia recently described to me a birthday party she went to and said to me “The only thing I didn’t like is I had to wipe off all those blue and green and red creams off the tops of the cupcakes. Bubbie, why do they need it?” Yes, why indeed?

I make muffins, and make them festive in countless ways!

The festive part is not expressed in extra sugar or fat, or added  colorings. To name just a few examples: I make mini muffins; I use multicolored muffin liners; I sprinkle them with miniature chocolate chips, grated coconut, grated apple, blueberries or chopped nuts; I stick cute flags and candles into them at display time. However, if you absolutely must, top the muffins (excuse me, the cupcakes) with icing or frosting or whatever, I trust you will find recipes for that everywhere. But I sincerely hope you don’t…..

As always, I am starting with the simplest preparations.

This is my master muffin recipe, complete with all variations. You will be amazed at all the possibilities, all equally easy, delicious and nutritious. Mix and match, and get different results each time. You will never ever eat a store-bought muffin again, let alone a muffin mix: I am not even going there! This recipe makes a dozen and a half medium muffins, in less than ten minutes’ preparation time.

All these muffin batters are mixed by hand, no need for a mixer.

My muffins are all gluten-free-friendly.

Just one useful piece of advice: When adapting these recipes to gluten-free, always make muffins out of them, not larger cakes because the smaller the gluten-free item, the more manageable, and the less room for flopping and crumbling.
