Indian Noodle Almond Pudding Recipe

Almond pudding is as delicious as it is nutritious.

It is overlaid with wonderful Indian flavors. I find that Indian desserts often err on the sweet side, but I have made sure mine is not a smidgen sweeter than it needs to be.

You will notice there are no sugar or sweeteners at all

The choice of ingredients is so interesting that the dessert is naturally sweet: the noodle almond pudding is a real original, and a nice way to get kids to eat their veggies! Gluten-Free to boot! Noodle Almond pudding is every bit dinner food as it is dessert or snack. Sweet potatoes are a real nutritional powerhouse too.

Hot Chocolate Recipe. Dairy or Vegan

Hot Chocolate? I never wait for a reason to enjoy a cup!

It is the perfect comfort food on a cold rainy day, but it will do just great any other day as well, thank you very much!

A friend recently brought me a box of insanely expensive hot chocolate mix.

I couldn’t wait to try it, and . . . I was frankly underwhelmed. What’s the big deal, I thought. It certainly didn’t beat boiling some milk or dairy-free milk with some good cocoa powder, a little sugar, and maybe a little vanilla extract or other flavoring. Yes, that’s the whole story! No problem making your own natural mix the instant way, using milk powder—dairy or not—and mixing it with boiling water, making a delicious cup of hot cocoa in a jiffy. I still make it for my children, who now enjoy it with their children. Love of hot chocolate is forever. Thank G-d for small blessings!

This is my favorite hot chocolate mix, which I always have on hand. Get racy and add to your cup the flavoring you like, one at a time, and get a new variation on the classic each time.

I am showing you here two convenient ways of making your own hot chocolate mix: Just add milk, or just add water, both equally delicious.

Peanut Butter Chocolate Bars Recipe

I created my Peanut Butter Chocolate Bars for a special celebration:

I was celebrating the discovery that my granddaughter Musia was no longer allergic to peanut butter. And since she has a sort of chocolate obsession, this was the ultimate gift.

I threw some Rice Crispies into my Peanut Butter Chocolate Bars.

I got to my Musia’s heart even faster! We were buddies even before then, but afterwards… well, here I am, giving out all the secrets of my popularity with kids big and small! (maybe the drop of rum included in each bar helps too?). There is no party without my Peanut Butter Chocolate Bars at my house.

My Peanut Butter Chocolate Bars are gluten-free to boot! All you need to do is get the Crisp Rice Cereal that is clearly marked Gluten-Free.

A good, super healthy version of Rice Crispies is Crisp Brown Rice Cereal.

Lemon Coconut Mousse Recipe

Lemon Coconut Mousse: Another treat born of good flavor matchmaking!

Anyone not a lemon lover, or coconut lover, need not apply! Naturally gluten-free.

In my catering days I have always used unflavored kosher gelatin in many exciting desserts but had never offered any of them in my cookbooks and my demos, as it was available only in bulk for food service. Recently food service has finally made kosher gelatin available for retail to the public. You will find this really exciting news as it is absolutely dairy- and meat-free (although it is derived from cow’s bones, bones are considered thoroughly pareve, or meat-free), and perfectly reliable in your preparations.

Still if you would rather not use an animal-derived product in the lemon coconut mousse, use agar.

Raw Almond Pudding Recipe. All Variations

My raw almond pudding is my brand new star.

With this delightful raw almond pudding I am proudly expanding my Low Carb Treat Repertoire  This new dessert is the result of much tinkering, not only in honor of some severely sugar-restricted friends who want their dessert and eat it too, but for us omnivores! This almond pudding has everything going for it: low carb (very-low-to-no-carb if you use stevia);  it is so nutritious it is equally at home whether you enjoy it as dessert or as breakfast; 100% raw, no cooking; vegan; the chia seeds are a superfood; a snap to make. What more could anyone wish for in a dessert? Even those of us who can’t have nuts can forgo the almonds and replace the almond milk with another no-nut milk.

I love to use almond milk, I find some excellent choices in health food stores or better supermarket.

All brands marked unsweetened are low in calories, ranging from just 30 to 45 calories per 1-cup serving. Play with different brands and see which one you like best. Likewise, use whole milk or full fat coconut milk if you are looking to maximize the caloric content.
