Seaweed Vegetable Rice Recipe

 Seaweed Vegetable Rice dish:

A real Superfoods Showcase for me! Redolent of Asian flavors, and substantial enough to be a wonderful vegetarian main dish. Still, if you would like, just throw in some smoked turkey or cooked chicken or meat. Likewise, you can play with the selection of ingredients I am suggesting, just as long as they are all fresh or frozen (not canned and not processed)

Seaweed is easy to find, and is quite versatile.

This seaweed vegetable rice dish is only one of the wonderful things you can make with it. You can use seaweed in salads, in green smoothies, in nori rolls. Practically no calories, and a nutritional powerhouse!

Indian Corn Amaranth Pudding Recipe

Corn amaranth pudding:

Overlaid with my favorite Indian flavors, it is another perfect example of great results with plebeian ingredients, and a snap to make.

This spicy and funky dessert takes comfort foods to a whole new level.

Gluten-free without even trying.

Ghee, cardamom and ginger all add delicious Indian layers of flavor.  Ghee (clarified butter) is easy to find in health food stores. Can’t have dairy? Use coconut oil, or olive oil

Combining Corn and Amaranth just gives you another opportunity to explore with the wonderful gamut of gluten-free whole grains, but if you decide to make it an all-corn pudding or an all amaranth pudding, simply use all amaranth or all corn meal.

Apple Crumb Pie Recipe. Stone Fruit Variations

Apple Crumb Pie, the all-time American favorite!

And as easy to make as the proverbial…. apple crumb pie! One of my favorite comfort foods.

No crust here, but loads of crunchy topping.

All Gluten-Free Friends:

T is a snap to make the gluten-free way too, so go for it.

Berry Crumb Pie or Stone Fruit Crumb Pie: stone fruit and berries are plentiful (or if you want to use frozen anytime, my great favorite), scroll down to the bottom to find instructions.

If you get ambitious, make 6-8 individual pies in 3-4 inch ramekins, it will add a little prep work, but will be beautiful.

Although I recommend serving apple crumb pie warm, room temperature will work too.

Indian Noodle Almond Pudding Recipe

Almond pudding is as delicious as it is nutritious.

It is overlaid with wonderful Indian flavors. I find that Indian desserts often err on the sweet side, but I have made sure mine is not a smidgen sweeter than it needs to be.

You will notice there are no sugar or sweeteners at all

The choice of ingredients is so interesting that the dessert is naturally sweet: the noodle almond pudding is a real original, and a nice way to get kids to eat their veggies! Gluten-Free to boot! Noodle Almond pudding is every bit dinner food as it is dessert or snack. Sweet potatoes are a real nutritional powerhouse too.

Hot Chocolate Recipe. Dairy or Vegan

Hot Chocolate? I never wait for a reason to enjoy a cup!

It is the perfect comfort food on a cold rainy day, but it will do just great any other day as well, thank you very much!

A friend recently brought me a box of insanely expensive hot chocolate mix.

I couldn’t wait to try it, and . . . I was frankly underwhelmed. What’s the big deal, I thought. It certainly didn’t beat boiling some milk or dairy-free milk with some good cocoa powder, a little sugar, and maybe a little vanilla extract or other flavoring. Yes, that’s the whole story! No problem making your own natural mix the instant way, using milk powder—dairy or not—and mixing it with boiling water, making a delicious cup of hot cocoa in a jiffy. I still make it for my children, who now enjoy it with their children. Love of hot chocolate is forever. Thank G-d for small blessings!

This is my favorite hot chocolate mix, which I always have on hand. Get racy and add to your cup the flavoring you like, one at a time, and get a new variation on the classic each time.

I am showing you here two convenient ways of making your own hot chocolate mix: Just add milk, or just add water, both equally delicious.
