Quick Minestrone Soup Recipe

My Quick Minestrone tastes as if you had slaved on it!

I trust you should have no trouble whatsoever finding dozens of delicious minestrone recipes, made the loving unhurried way. My idea for this quick and incredibly satisfying version of the classic was: How can I play with the same ingredients and still get a great minestrone in a fraction of the time, and as always, all natural? The answer is:

Frozen vegetables are the best!

The fabulous selection of unprocessed frozen vegetables available in supermarkets, and dry herbs (although if you do have fresh basil, it would be really nice) makes for a wonderful soup.

This soup requires no prep work at all.

Please note the optional grains I have suggested cook quickly and need no soaking, to keep up with the brief cooking time of the soup.

Chocolate Chip Magic Health Bars Recipe

Health bars are a delicious nutrition-packed mini meal

You may never again get anywhere close to the commercial worthless unhealthy health bars perplexingly and inaccurately marketed as healthy and good for you; Made with high fructose corn syrup and soy protein isolates: Healthy? Ugh, I don’t think so! Not enough people are aware of the dangers these two ingredients pose. Please read my blog post on the subject, What Price Protein: Beware of Those Protein Bars! 

My Magic Health Bars are loaded with super healthy ingredients:

This places them in an ideally enviable position, both as a healthy dessert and as a healthy small meal: Hence the Magic in their name. The other part of the magic is, well, my Magic Health Bars live up to their healthy name, plus they are fabulous, vegan, gluten-free, nut-free-adaptable, soy-free, crunchy and very moderately sweet. The bars will travel better than their Magic Cookie first cousins (exact same recipe, cookie shapes), compact and snug as they are: the perfect on-the-go food!

Fish Curry Recipe

Consider this fish curry a complete meal.

Once you master the delightful gamut of Indian flavors in your own kitchen, it will be kind of hard to have an appreciation for them in a restaurant, as you will do better each time at home.

I made this fish curry with Swiss chard, because a magnificent bunch was waving at me invitingly, I just had to take it home, and indeed it paired beautifully with the fresh tomatoes. But you can substitute other vegetables for the Swiss Chard (cauliflower, peas, small potatoes, sliced okra etc…)

For a vegetarian dish:

Proceed with this fish curry recipe, and substitute 2 pounds of extra-firm tofu cut into inch cubes or unflavored seitan for the fish.

Apple Noodle Kugel Recipe. Dairy-Free Variation

Apple Noodle Kugel is a huge favorite in Jewish cooking.

Unfortunately, it can often err on the rich and eggy side. I have tinkered with the ingredients, and ended up with a lean, easy egg-less (suitable for our vegan friends) and delicious kugel. Delicious enough even to be dessert, and not too sweet to be a side dish! The noodles used here can be gluten-free. If you started with long noodles, cut them short with scissors.

This apple noodle kugel is as delicious made the dairy or dairy-free way.

For a fun presentation and no cutting hassle, pour the apple noodle kugel batter into greased muffin molds, and bake about 40 minutes.

Moroccan Potato Tajine Recipe

Potato Tajine is Sephardi food at its best and most understated.

Straight from the Moroccan kitchen of my childhood. Starring the humble potato. Ridiculously simple ingredients and hardly any labor. I have included several variations of this potato tajine to make it a full one-pot dish.

Make this potato tajine an all-vegetable main course or just a side dish.

It is overlaid with all that is fragrant and aromatic and colorful, and is the perfect vegetarian dish. Maybe your next Meatless Monday Dinner!

We love cooking with olives.

What’s not to like? Olives pack in quite a flavor punch, and they are so healthy!
