Mixed Grilled Vegetables Recipe – Pasta Variation

Mixed grilled vegetables are one of my favorite go-to dishes.

Everyone loves a plate of grilled vegetables, to eat as is or to use as a filling for sandwiches. I have chosen to share the most ridiculously simple way. First of all, please don’t find me disingenuous: Some of us, including yours truly, were not blessed with a backyard or porch or any outdoor cooking amenities whatsoever, so my “grilled” vegetables are roasted at high temperature in one layer, and just as delicious as grilled, requiring no turning over and no maintenance. Second, the trick is to combine your veggies according to their cooking time.

To the basic selection below, you can add string beans, asparagus, endives, radishes, Brussels sprouts, and fennel; but you will roast carrots, sweet potatoes, parsnips, potatoes separately because they require a longer cooking time. Roast beets all by themselves so they don’t bleed into your other veggies, or use the wonderful golden beets now available at all good produce stores. For all roasting, remember, one layer, no piling! Lining the baking sheet with foil reduces, or sometimes even eliminates, cleaning.

When the vegetables are roasted, go ahead and get a little fancier if you wish: toss in a little olive oil, chopped fresh basil, a few drops of balsamic vinegar, and a little ground pepper. Most often, I add nothing at all: It’s that good!

Variation- Pasta with  Mixed Grilled Vegetables:

Dice your grilled vegetables , and toss them with 1 pound cooked pasta of your choice. Serve hot or at room temperature.

Cold Pasta – Sun-Dried Tomatoes, Roasted Peppers, and Olives Recipe

Cold Pasta dishes are wonderful for summer and all buffet displays. And the best part is, beside for boiling the pasta, this cold pasta dish doesn’t require any cooking. If you are watching your starch intake, or if you are simply, as I always am, looking for better grains, this is your chance to experiment with soba or rice noodles: Respectively low-gluten and gluten-free and prepared in a snap, they will do the job with flying colors!
For this cold pasta dish, you have a wide choice of pasta, but please don’t select a tubular pasta; in other words, no ziti, no bucatini, or other pasta with holes running through their centers. The only time we want tubular pasta is when we have a not-too-rich pasta sauce, such as tomato or vegetable sauce.
Although this cold pasta dish is delicious as is, frozen artichokes hearts or bottoms would be a great addition, at no extra labor cost (just let them thaw!), and would be a good chance to sneak in the delicious, nutritious and low-calorie artichoke, which is still so underrated in America.

Quick Moroccan Vegetarian Bean Soup Recipe.

Vegetarian Bean Soup:

Another delicious all-vegetarian and inexpensive Moroccan soup, done the quick way.

Comfort food at its best. Unlike on my personal blog, I am using canned beans in this vegetarian bean soup recipe, as the theme of this whole recipe section is to get a perfect meal even when we are short on time. But this is the luxury that using Levana Nourishments affords you, as you start with that powerful pouch, which packs a powerful punch.

So, don’t divide: Freeze! You will be happy to find a container in the freezer when you are short on time and crave a large bowl of comfort food!

My Cabbage Sauerkraut Soup: Double cabbage treat.

I look for every excuse to use the humble cabbage, like in this cabbage sauerkraut soup. Talk about gastronomie sans argent, with nutrition worth its weight in gold.

Cabbage and caraway have a natural affinity.

They team up with the potatoes to produce this delightfully funky cabbage soup.

The addition of the fermented sauerkraut in this cabbage sauerkraut soup makes it a wonderfully healthy choice.

Spreading the cabbage flavor thicker still, and adds such intense  flavor that the addition of any meat product becomes virtually superfluous. I hope you always welcome, as I do, a delicious vegetarian soup!

I love this cabbage sauerkraut soup nice and chunky, and the clear broth is delightful.

However, when kids are involved, I will cream it with an immersion blender.

Creaming this cabbage sauerkraut soup is an innocent trick I use to get kids to eat it: while they might discard the ingredients they can spot in the soup, they will greatly appreciate the sum total of all these “controversial” and totally undetected ingredients: Trust me: Tried and true!

If a very low carb soup is what you are after, no problem substituting celery root for the potatoes.

Everyone celebrate autumn (okay, winter) in the way that makes them most happy, cozy and comfortable. Since we are huge salad eaters at home, our seasonal celebrations most often gravitate around the food that best express the seasons. So salads are a great showcase! Beets, red apple, red grapefruit, red cabbage? With a fruity cranberry dressing and a drizzle of pomegranate molasses? Mmmmmm…..

You will find my Autumn Beet Salad quite versatile:

Let me start by saying I am thrilled for the brave little beet. We grew up eating beets everyday, but in America they were scorned and all but ignored, scoring points mostly for their help with our, hmmm, regularity. More power to the humble root that recently moved from wallflower to rock star status. Now we regularly enjoy it, cooked or raw, in risotto, cake, latkas, smoothies, soups, And of course, in salads. I cannot resist making it even healthier and more delicious by adding a pouch of Levana Nourishments Mixed Berry

In our, the consumers’ defense, I’ll say:

Beets can be somewhat high maintenance

The prolonged cooking they necessitate can really be a deterrent. But the good news is, we can now easily find perfect, peeled, roasted and vacuum-packed beets, which makes them a snap to use

I will start with the basic beet salad I started out with, and list all the variations, including main course. It has no salad leaves, and therefore it is sturdy and perfect even the next couple days
