Would  you  like  to munch on the roasted roots all by themselves?

Go right ahead and snack on them: they are fantastic. Or serve them with roast turkey or chicken. I  trust  my  book  amply  bears  this  out: I  am  crazy  about  all  roots,  and  why not?  Lean, delicious, versatile,  incredibly  nutritious—how  can  you  miss?  I run  home  with  all  roots—no  matter how misshapen and grimy and odd- looking—I find at the market, the way people bring home cast-off, disheveled animals and by dint of love and attention groom them into perfectly domesticated pets. Roots always make me think of the universal line in Psalm 118:23: “Even Maasu Habonim Haita Lerosh Pina,” which translates as “The stone that the builders discarded has become the cornerstone.” Yes, even humble roots are involved in thrilling rags-to-riches stories!

Remember to use a hammer to dice all those large roots! That will make your job a breeze.

Gluten-Free Muffins Recipe. All Variations

For these gluten-free muffins, one of the flours I used was almond flour, which imparts a wonderful flavor and delicate texture. But of course if you are dealing with a nut allergy as well as a gluten allergy, double up on other flours. Let me start by listing my gluten-free recipe exactly as I made it, using my favorite flours (almond and oat), then discuss other flavor and flour options.

Here I am giving you a recipe for a single recipe of Gluten-free muffins, but I should tell you I always make a double batch, why not, just as long as all ingredients are out and I got that oven going, plus my gluten-free muffins freeze perfectly.

Tapioca flour or arrowroot flour are very nutritious, and are easy to procure in health food stores

If you intend to bake gluten-free muffins, bread and other treats on a regular basis, it really pays to buy larger containers of gluten-free flour, in price clubs or online, as I do, as smaller containers can really err on the expensive side. I prefer to make my own gluten-free flour mixture than buy gluten-free flour mix, but of course if you come across a gluten-free flour mix brand that uses all healthy ingredients, go ahead and use it in your recipes, a total of 4 cups (including the tapioca, which the mix most likely includes).

Vegan Raspberry Chocolate Mousse Recipe

My Raspberry Chocolate Mousse is my new rock star.

That’s the consensus! It doesn’t in the least hurt that my raspberry chocolate mousse, a cousin just once removed from my vegan chocolate mousse (see below) is, like the great favorite many of you are used to, also vegan, gluten-free, no-cooking, ridiculously easy and tastes sinfully rich even as it is made with very sensible ingredients. I couldn’t keep my hands off it all day Friday, and kept sneaking a spoon in one of the glasses every half hour, until I wiped it out. I just ordered a dozen little 5-ounce mason jars just like the one in the picture, in honor of this dessert.

The pairing of chocolate and raspberries in this raspberry chocolate mousse is sublime.

As always when working with berries, I prefer frozen berries, as they are full-flavored and at the height of their ripeness and sweetness, and always good to go. I could see using frozen pitted cherries instead of raspberries; in this case just cut them in two or three pieces so they are distributed more evenly in the mousse. Likewise, I could see using cranberries: only in this case, add a little sugar.

Plain Vegan Chocolate Mousse:

I can’t tell you how many people make my recipe!
– Skip the berries and the creme de Cassis.
– Add 1 tablespoon instant coffee, decaf OK, dissolved in a few drops of warm water.
Proceed exactly as instructed in the recipe.

Flax Oat Gluten-Free Banana Bread Recipe

My newborn gluten-free banana bread just hit a home run!

Perfect for breakfast: minimally and naturally sweetened; it relies on the natural sweetness of the bananas.

I looked around me in my daughter’s kitchen, after the children asked me to make a banana treat. I was intent on making a very high fiber bread that would promote… regularity (a perennial quest, for many of us), even while it tastes fantastic.

My gluten-free banana bread may well be the answer to your lower carb prayers!

My daughter, and indeed, all my children, have a super healthy pantry, just as I do, so finding what I need to make the healthiest treats is no trouble ever.

I just threw all my ingredients in a bowl, mixed, poured, baked and prayed.

It’s the best! It is so nutritious that you can very easily make it a significant part of your meal: a nice slice of my gluten-free banana bread with a smear of butter, cream cheese or nut butter makes a terrific breakfast. And with a big salad or soup, it will make the perfect meal.

Both the oats and the flax give the gluten-free banana bread its hearty flavor and texture. Oat is the dream grain, in every respect. Flax is a nutritional powerhouse, with a mild and unobtrusive flavor, and very inexpensive. And the optional touch of cocoa gives it its deep dark color and added zing.

Spicy Chipotle Chicken Recipe

Chipotle Chicken is delicious.

It has a thick and delicious sauce that forms naturally while the dish cooks.

I can make a delicious and dairy-free mock cream sauce in meat dishes by stirring in a good quality plain soy or coconut yogurt!

Yes: Kosher food has moved up in the world, just the way I like it: Natural!

Chipotles are smoked red peppers

They are delightful and easy to find in powdered form, and a great staple in Latin Cooking.

Hot hot hot, so don’t get carried away! The mock cream sauce in this Chipotle Chicken is so delicious you might consider using it even in dairy dishes. The mock cream sauce keeps the chicken breasts delightfully moist.

The dish freezes very well

Make the whole recipe, and freeze the unused portions.
