Chicken Mole Sauce: That’s the best of both worlds!

Mole signals the presence of Chocolate.

I can’t tell you how many times I have knocked my guests’ socks off with this dish. Mole (pronounced Mow-Lay)  comes with a most improbable ingredient combo, but the beautiful thing is, the chocolate works its usual seduction, and the finished dish is amazing.

In Chicken Mole Sauce, all Flavors are fully stated

Any of the liquid listed here (Jasmine tea, cranberry juice, or pomegranate juice) will be a great choice, and will stand up beautifully to the chocolate. Jasmine and chocolate, that would be my first choice: another marriage made in heaven. Try Jasmine Chocolate Truffles sometime!

Black Bean Burritos Recipe. Vegetarian Option

My black bean burritos are in my Dairy-Free Cookbook.

I whip up my BBB recipe, as I call it, whenever company is coming on short notice. If I don’t have the burritos or corn tortillas on hand, I simply put the filling in a bowl.

Black Bean Burritos are so much fun to eat!

Let everyone dig in, with corn chips and guacamole, vegan yogurt or vegan sour cream, tomato salsa, vegan cheddar etc..

Chocolate, beans and beer! Yum!

A mischievous and wonderfully messy little trio, brought together in these burritos: how can you miss?

Black Bean Burritos are great the vegetarian or vegan way too!

There are so many terrific flavors in the dish, it will never miss the meat! Great to know for those times we must accommodate meatless guests.

Hamburgers Recipe. Vegetarian and Fish Variations

Hamburgers are a perennial favorite.

You can make your own hamburgers, right at home, in minutes.

Please don’t get impatient:

There is simply no recipe for delicious and healthy hamburgers.

Boom. Boom. Done.

But there sure are lots of good tips for turning out perfect burgers each time.

  • Use lean meat please! You’ll get much more flavor, plus you will have room for toppings and condiments.
  • Make your hamburgers with any meat you like, and get exciting different burgers each time: beef, turkey, lamb I adore lamb burgers), chicken, tuna, salmon. Even Bean Burgers and Veggie Burgers!
  • Rule of Thumb: For every pound of burger mixture, add 1 pouch of Levana Nourishments Garden Vegetable or Levana Nourishments Mushroom Medley
  • I’ll bet you think you can’t get good hamburgers unless you fire a grill! We backyard-less and grill-less city dwellers enjoy delicious hamburgers all the time. Of course if would be great to have the outdoors space and the grill and the fun, but we must work with what we have!
  • Get yourself a good wide nonstick skillet. Forget about the pre-shaped burgers you will find at your butcher’s store, that save you a few seconds but ruin your burgers. Heat your skillet till it’s real good and hot. Shape your burgers nice and thick, absolutely nothing added (one exception: the Sephardi-style spicy meatballs and burgers, which include lots of nice spices and minced herbs, but don’t get any added toppings or condiments), place them in your skillet, and cook them about 2-3 minutes on each side for medium rare, a drop more for medium, but please don’t overcook your burgers or they won’t be good and juicy!
  • Get yourself a good quality whole grain hamburger buns. Gluten-free buns are  available too, in health food stores. Toast them if you like.
  • Now play with your toppings, anything you like: Ketchup, bottled hot sauce, thinly sliced onions, fried onions, cocktail sauce, sliced pastrami, grilled portobello, sliced tomatoes, good pickles, lettuce leaves. Hey can I interest you in Chipotle sauce? Nothing to it! Mix in a food processor: 2 canned chipotle peppers, with 2 tablespoons of the liquid, 1/2 cup ketchup, 4 large cloves garlic, 6 sprigs cilantro, Salt to taste.

 

  • Open wide: you are in for a treat!

  • Burgers Sans Bun: Hey what’s wrong with that?
  • We grew up eating burgers all the time, but not in a bun. Just them burgers with lots of chopped salad. Delicious! Lower Cal Lower Carbs! “Affordable”!

Meatloaf Recipe. Asian Variation

Meatloaf is the easiest and tastiest dinner ever!

All aboard in a mixing bowl, mix, bake and enjoy!

My meatloaf is extended by vegetables and whole grain

You end up with a leaner and lighter high fiber meat loaf.

Did you notice that children love meatloaf?

If you decide to use ground turkey, try your best for dark turkey, go a little heavier on the seasonings, and add 2 tablespoons paprika for color.

It will also be delicious served cold in sandwiches or salads.

It will freeze very well, so you will be happy to enjoy it in several ways. A sandwich with dijon and crisp lettuce, and some kimchee, that’s one of my favorite lunches

Spaghetti and Meatballs Recipe. Gluten-Free friendly

Spaghetti meatballs in my house are like a whole outing:

Sort of like Dinner and a Show. Party food and comfort food all rolled into one. We all used to pile into my mother-in-law’s small apartment for her famous spaghetti meatballs, and always lied to her that somehow ours didn’t come out as good as hers: Anything to have her make a vat of it, which would disappear in minutes. All the children in our family still clamor for it and feed it to their own children.

Do not hesitate to experiment with gluten-free noodles:

Rice, soba, quinoa noodles, beans noodles etc… just as I do: delicious and much gentler on your system!

You will be able to have pasta more often!

And not just in spaghetti meatballs, but many other pasta treats as well. It’s been years since I last had wheat noodles, and I don’t miss anything about them one bit, least of all the bloating and discomfort that used to follow each white pasta meal as surely as night follows day. Many of us look to reduce their gluten intake, even without converting to an all-out gluten-free diet.

Don’t skip adding warm water to the meatball mixture!

Or even seltzer: this is the secret of my extra light and extra fluffy meatballs! forget about bread crumbs. I never use them in my meatball mixtures.
