My Cabbage Sauerkraut Soup: Double cabbage treat.

I look for every excuse to use the humble cabbage, like in this cabbage sauerkraut soup. Talk about gastronomie sans argent, with nutrition worth its weight in gold.

Cabbage and caraway have a natural affinity.

They team up with the potatoes to produce this delightfully funky cabbage soup.

The addition of the fermented sauerkraut in this cabbage sauerkraut soup makes it a wonderfully healthy choice.

Spreading the cabbage flavor thicker still, and adds such intense  flavor that the addition of any meat product becomes virtually superfluous. I hope you always welcome, as I do, a delicious vegetarian soup!

I love this cabbage sauerkraut soup nice and chunky, and the clear broth is delightful.

However, when kids are involved, I will cream it with an immersion blender.

Creaming this cabbage sauerkraut soup is an innocent trick I use to get kids to eat it: while they might discard the ingredients they can spot in the soup, they will greatly appreciate the sum total of all these “controversial” and totally undetected ingredients: Trust me: Tried and true!

If a very low carb soup is what you are after, no problem substituting celery root for the potatoes.

Everyone celebrate autumn (okay, winter) in the way that makes them most happy, cozy and comfortable. Since we are huge salad eaters at home, our seasonal celebrations most often gravitate around the food that best express the seasons. So salads are a great showcase! Beets, red apple, red grapefruit, red cabbage? With a fruity cranberry dressing and a drizzle of pomegranate molasses? Mmmmmm…..

You will find my Autumn Beet Salad quite versatile:

Let me start by saying I am thrilled for the brave little beet. We grew up eating beets everyday, but in America they were scorned and all but ignored, scoring points mostly for their help with our, hmmm, regularity. More power to the humble root that recently moved from wallflower to rock star status. Now we regularly enjoy it, cooked or raw, in risotto, cake, latkas, smoothies, soups, And of course, in salads. I cannot resist making it even healthier and more delicious by adding a pouch of Levana Nourishments Mixed Berry

In our, the consumers’ defense, I’ll say:

Beets can be somewhat high maintenance

The prolonged cooking they necessitate can really be a deterrent. But the good news is, we can now easily find perfect, peeled, roasted and vacuum-packed beets, which makes them a snap to use

I will start with the basic beet salad I started out with, and list all the variations, including main course. It has no salad leaves, and therefore it is sturdy and perfect even the next couple days

This is a generous recipe, it will make you a good two dozen muffins. Freeze what you didn’t serve, and pop out the muffins as needed.

Quick Pho Recipe. Vegetarian Option

Quick Pho

Pho is a wildly popular Vietnamese noodle soup

It includes broth, rice noodles, vegetables and meat.

Pho has traveled beautifully, and has become a complete meal comfort food in many homes and restaurants around the world.

It usually uses as its base beef bone broth that cooks overnight. If you have time to make it, more power to you. I will not go here into the making of a beef bone broth. Certainly not because I don’t think beef broth is wonderful and wonderfully nourishing, but because my goal here is to encourage you to make pho on short notice.

So my solution to a bone-broth-less pho is miso paste, and a good splash of sake

There are no hard and fast rules to what pho should include, but some key ingredients are always in place:

  • Very thin sliced meat. The meat practically cooks on contact, in seconds, and is added all the way at the end of cooking. Seitan or tofu for a vegetarian version.
  • Sprouts, lime, cilantro and scallions are added just before serving

I think of Pho as the culinary love child between miso soup and pad thai.

Indeed many ingredients included in miso soup and pad thai are showcased in pho, and the recipe is just as elastic as for these two great favorites.

I will include some of my favorite ingredients, and you will play with your broth and your vegetables as you see fit

Attention Vegetarian friends:

Pho is for you too! Simply skip the sliced beef, and add seitan strips and/or firm tofu cubes
